Happy Tuesday! Today’s post will be quick and easy, both in the writing and the recipe, as I came down with quite an awful flu last week and I’m still in recovery mode. Not having an appetite is the strangest thing for someone who is always hungry like me!
My usual breakfast these days tends to be something like this or this, but every once in a while I like to change it up with something even quicker to make.
One morning I woke up and had a random memory of a wrap I used to bring for lunch in high school that was similar to this toast. I’m not one to reminisce high school, but a good meal I can never forget.
All you need are ingredients right in your kitchen. Bread, cream cheese, an apple, and cinnamon. That’s it. It really can’t get any easier. You can use any type of bread. Gluten free, spelt, and whole grain all work well (rye is my favourite) and use vegan cream cheese to make it vegan.
The tangy cream cheese pairs perfectly with the crunchy, sweet apple and the cinnamon is the icing on the cake, so to speak.

- 1 slice bread
- generous swipe of cream cheese
- a few slices of an apple
- sprinkle of cinnamon
- Toast the bread.
- Spread the cream cheese on the bread, top with apple slices, and sprinkle with cinnamon. Serve.
